Gluten-Free Peach Cobbler

Serving size: 6

Ingredients:

  1. 3/4 Cup of Almond Meal
  2. 1/4 Cup of Gluten Free Flour
  3. 3 Tablespoons of Monkfruit
  4. 1 Tablespoon of Cinnamon - My favorite is Ceylon Cinnamon
  5. 6 Peaches
  6. 1/4 Teaspoon of salt
  7. 1 1/2 Teaspoons of Bakng Powder (I use Aluminum Free)
  8. 1/2 Cup of Butter
  9. 1/2 Cup Cream

Instructions:

  1. Preheat your oven to 400F.
  2. Skin and slice up your peaches.
  3. Cover the peaches with cinnamon and sweetener.
  4. In a separate bowl, mix up the baking powder, salt, almond meal, GF Flour.
  5. Microwave the Butter and the cream together. Trust me, this will melt the solids in the cream. This makes incorporating the liquid and dry ingredients together easy.
  6. Pour the warmed liquid into the bowl with the dry goods.
  7. Gently mix the ingredients until all the flour is incorporated.
  8. Gently pour the peach and cinnamon mixture into an 8x8 baking dish.
  9. Cover the top of the peaches with the batter mixture.
  10. Bake at 400F for 45 minutes, or until the top is golden brown and cooked all the way through.

Pressure Canning Ground Beef

Ingredients: Several pounds of ground beef. Pre-Requisites: Ready your pressure canner for use. Link to National Center of Home Food Preservation instructions. Step 1: Prepare your jars and lids! As always, you should start with sterile jars and lids. Step 2: Prepare your meat! Gently brown up your meat. You don't want to grind it up too small. Drain most of the fat off of your meat.
